Even though this post includes a recipe at the end, this is not a “cooking by the books” post. This is simply my take on having a little treat once in a while! When I picked up my kids from school a few days ago, neither one was smiling. Kid #1 was tired and stressing over a science project due the following day. Kid #2 had a sore throat and was exhausted after a day of standardized state testing. The weather was being a brat, too. Spring had recently arrived, but it sure didn’t look like it! Earlier that day, I was reading when a massive shadow blotted out all natural light. When I glanced outside, it was like viewing the hellish clouds that hovered menacingly over Mordor. They were dark gray and deadly-looking. Then, Mother Nature had the audacity to start snowing! At the end of March! What nerve.
So, my poor downtrodden kiddos and I needed a little TLC. When I was growing up, my mom used to almost always have cookies on hand. Sugary, chocolaty, crunchy, delicious cookies, to be eaten warm with a glass of milk. Well, my family is on a “healthy eating” kick, which we hope to make a permanent way of life. We don’t have a lot of treats on hand. We don’t avoid all sugar, but we’re trying to cut back. However, with the girls feeling so down and the nasty weather outside that would make even Frodo afraid to step his hairy, over-sized feet outdoors, I decided we deserved a little bit of a treat. Enter Pinterest searches, and my obsession with small, single-serving treats. I found what I wanted in a few seconds: a chocolate chip cookie in a mug!
It was warm, gooey, and perfect. A great pick-me-up, but with only one serving each, nobody ended up binge-eating one and a half (dozen) cookies–not that I’ve ever done that before. *Ahem*
Healthy eating doesn’t mean you can’t have a little treat once in a while. And I don’t mean to imply that sugar fixes everything and makes all the sadness in the world go away. I’m just saying that we can all use a little cup of sweetness once in a while, and we can indulge a bit without eating our weight in sugar. 🙂
Here’s the recipe I used. I tweaked it a bit and used gluten-free flour since I have a wheat allergy.
Chocolate Chip Cookie in a Mug
makes 1 serving
1 Tbs melted butter
1 Tbs sugar
1 Tbs brown sugar
1 egg yolk
1/4 tsp vanilla
1/4 C. flour (wheat or all-purpose gluten-free flour mix)
2 Tbs. chocolate chips
Mix well in a mug and microwave for 60 seconds (microwave times may vary, keep your eye on it). Let cool slightly and enjoy!
